Guacamole is such a tasty dip and it always signals that summer barbeques are on their way. Before you make this recipe, make sure you choose avocados that are ripe – your guacamole won’t be half as tasty if they are hard.
2 ripe avocados
1 tbsp lemon or lime juice
2 finely sliced spring onions
1 tbsp of chopped coriander leaves (optional)
1/2 deseeded and chopped chilli (optional)
Salt and pepper to taste
Finely slice the spring onions and squeeze over a little lemon juice to reduce their astringency.
Cut the avocados in half and remove the stone. (If your avocado is perfectly ripe you should be able to tap it with your chef’s knife and twist to remove.) Score the avocado in cubes and scoop them out of the skin. Squeeze over the lemon or lime juice to prevent them from going brown. Mash the avocados roughly (the mashed mixture should be chunky, not overly mashed). Mix in the salt, coriander, spring onions and chilies (if using).
Taste your guacamole and adjust the salt, pepper and lemon/lime to achieve just the right balance of flavour.
