Italian Tomato Bruschetta
Nothing says summer quite like the Italian classic, tomato bruschetta. It is so easy to make and tastes amazing with fresh Tomatoes and Basil from the garden.
Ingredients
1 baguette
1 clove garlic
1 cup chopped tomatoes (we love using Cherry Tomatoes)
1 handful shredded basil
¼ finely diced red onion
1 – 2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp brown sugar
Salt and pepper to taste
Parmesan (grated)
Method
Slice the baguette in to rounds and toast in the oven with a splash of olive oil. Rub a whole clove of garlic across both sides of the toasted bread.
In a bowl, combine chopped fresh tomatoes, red onion, basil, balsamic Vinegar, oil, brown sugar, salt and pepper.
Spoon onto the bread rounds and grate a little parmesan over the top. Best eaten immediately!
Variations
If you don't have Basil, use other seasonal herbs like Parsley, Marjoram and Oregano.
No balsamic vinegar? Use freshly squeeze lemon juice instead!
