Lime Cordial

We have a soda stream which means no more plastic bottles of fizz and now I've discovered making my own cordials to add to the sparkling water.  Our lime tree is producing more every year so I have started with a straight lime cordial but next I'm going to try and lime and lemon mix.  Here is the basic recipe, it's a concentrate so a little goes a long way: 


3 cups of freshly squeezed lime juice 

1½ cups of white sugar 

1 teaspoon of citric acid 

Lime zest of one lime


Place the ingredients in a saucepan and simmer for 5 mins while stirring to dissolve the sugar.  Strain and pour into sterilized bottles.  When they are cool, place in the fridge.

Apparently this cordial will last for a month but ours was enjoyed long before that! 


Freestyle this recipe by substituting lemons or oranges for lime.  Add a little extra kick with some freshly grated ginger.
