Sautéed Carrots With Honey and Cider Vinegar

Even the kids will love this quick midweek side dish!  (It has honey in it - what's not to love????)  If you have carrots in your garden 


3 carrots 

1 clove of garlic 

2 tsp apple cider vinegar 

1 tbsp honey 

25 gm butter 

Salty and pepper 

Olive oil 


Peel or clean the carrots.  If they are large, cut/julienne them into small batons.  If you have a bunch of baby carrots from your garden, clean them and use them whole. 

Add a slug of olive oil and the butter to a pan and heat gently.  Once melted, add the carrots, the whole clove of garlic.  Sauté until the carrots soften (they should be tender but not mushy).  In the last couple of minutes of cooking, add the honey and cider vinegar.  Season to taste.
