Roasted Cauliflower

Cauliflower is a favourite in our household - but it can be used for more than plain old Cauliflower cheese!  I love to roast it with garlic and spices, then serve with fresh herbs and a drizzle of Greek Yoghurt.


1/2 Cauliflower

1 red Onion

Olive oil

1 clove Garlic

1 tsp Curry Powder

1 tsp Paprika

1 tsp Sumac

Salt & Pepper 

1/2 cup Greek Yoghurt

1/2 tsp honey

Juice of 1/2 Lemon

Handful of Parsley or Mint leaves

Salt & Pepper to taste 


Preheat oven to 180 degrees Celsius. 

Chop cauliflower into bite sized florets.  Cut onion into wedges and peel the Garlic.

Toss the cauliflower in a bowl, along with the spices, and salt and pepper to taste.

Drizzle some olive oil into the base of a roasting dish, and then add the cauliflower, whole garlic clove and onion.  Roast for 25-30 minutes, or until soft all the way through.  (Toss the cauliflower half way through cooking to brown all sides.)

While the cauliflower is cooking, make a dressing by combining the Greek yoghurt, honey, lemon, salt and pepper.

When cauliflower is cooked, take it out of the oven and squeeze a little lemon juice over.  

Serve with a drizzle of yoghurt dressing and sprinkled with fresh herbs.


Use Okinawa Spinach, baby Spinach, Perennial Basil or Coriander instead of the Parsley and Mint.
