Tabbouleh

The whole family will love easy Tabbouleh in wraps with roasted lamb, or as an accompaniment to summer meals.  This recipe is so easy that even your kids will be able to cook it!

Ingredients:

1 cup Bulgar wheat

1 1/2 cups boiling water

2 lemons (zest and juice)

3 1/2 tsp salt

1/4 cup extra virgin olive oil

2 spring onions (finely chopped)

1 - 2 cups of fresh herbs (parsley and mint are traditional)

1/4 cucumber (diced)

2 cups of tomatoes (chopped)

Method:

Pour the boiling water over the Bulgar wheat and add the lemon juice, zest, salt and olive oil.   Mix and leave to rest for 20 minutes.  During this time, the Bulgar wheat will soak up the water.

Add the tomatoes, cucumber, herbs, spring onions and pepper to the Bulgar wheat and mix through.

Serve with flat bread, yoghurt Tzatziki and slow roasted lamb for a taste sensation!

Variations

Get creative and make the most of your home garden!  This is a versatile salad.  The cooking purists might not agree, but we think that Tabbouleh tastes just as delicious with a few added extras.  Try adding:

  • Use couscous if you don't have Bulgar wheat.
  • Chopped capsicum if they are in season
  • Other herbs (like sorrel, coriander, chives or cutting celery)
  • A sprinkle of sumac.
