Karen's Zingy Zucchini Salad
Karen is a wizard at concocting delicious salads using the fresh produce from her garden. This family favourite is a tasty and easy mid-week summer salad that only takes minutes to make. It is perfect for busy working parents who want to put healthy but convenient food on the table!
Ingredients
2 courgettes/zucchini
Juice of 1 lemon
Olive oil
2 – 3 heaped tsp pesto
1 cup chopped herbs (parsley, mint, lemon balm)
Salt and pepper
2 handfuls of pine nuts.
Method
Grate the courgettes into a bowl and microwave for 1 minute. Dress the courgettes with the lemon juice, a generous splash of olive oil, the pesto and chopped herbs. Season with salt and pepper and top with toasted pine nuts.
Recipe Variations
The key to making the most of the fresh produce in your garden, is to adapt recipes to suit whatever is in season. You could:
- Swap out lemon juice for lime juice
- Add different combinations of herbs, depending on what you have in the garden (basil works well)
- Add some cherry tomatoes for some colour
- Add some baby spinach leaves along with the herbs
