What is Rosemary?
Rosemary is an aromatic Mediterranean herb with loads of flavour. In medieval times it was used at weddings to symbolise fidelity, and at funerals for remembrance. Pink Remembrance grows to about 1m high and 80cm wide and has weeping branches. It has dark green, needle-like leaves and pretty pink/lilac flowers.
Culinary Uses for Rosemary
Rosemary goes perfectly with roast potatoes and lamb, or grilled peaches with honey. It adds delicious depth of flavour to vegetarian quiche too!
Growing Conditions - Rosemary
This easy-care herb is ideal for new gardeners as it is a drought and wind tolerant plant that needs little attention. Once established, it will thrive with the occasional deep watering. Rosemary's only real requirements are well drained (slightly acidic) soil and sun.
Plant Rosemary in spring or autumn, but be prepared to prune it each year so it doesn't get too woody. Rosemary can be planted all year round in the upper North Island, but doesn't cope well with harsh frost and wet conditions. Rosemary shouldn't be planted near Tomatoes, but Beans, Broccoli, Cabbage, Carrots, Chillies and Sage make good companion plants.
